Day 9: Eggs (CAST IRON!)

I watched my parents house last night so naturally I woke up and cooked breakfast in their amazing kitchen!

They have seas of cast iron!! At least 20 pieces (ahhhhhhh) so I made eggs on a fun flat one this morning. Why I do not have any cast iron is beyond me but I WILL be getting some VERY soon!!!!

So although eggs are b-oring I loved the pan so much that it made the cut for today's blog!

This is my 3 year old son, Deacon's plate.... He requested his egg scrambled (I have a few fried)

Day 8: Turkey Burgers

So I cannot take credit for these as my girlfriend made them.... She uses Trader Joe's 21 Seasoning Salute and wowza they're delish!! She also has a culinary degree so ya... All of her food is truly amazing...

Hers are so much more simple than our which have like 20 ingredients! The next time I make them I'll share all that we throw in!

This was such a fun summer meal (and a great evening for us and our kids!)

Day 7: Hummus

Here was our picnic for the splash pad... I made some hummus to share (kind of a potluck picnic ;-)! Here is the simple recipe I use!

Totally spaced taking a picture today but here is a how-to recipe video on my homemade whole wheat (sugar & oil free) waffles:

Sooooo yummy and simple! If you make them please lmk what you think!

Day 5: Pizza

I have an AMAZING recipe on a quick 20-minute dough! This time I substituted half of the flour for whole wheat with major success!

Basil from our garden along with fresh mozzarella and tomatoes made for an awesome 'pie'

Day 3: Chicken & Veggie Soup

I love crock pot days... Although I swear that the smell makes me hungrier all day!!!

The weather was nasty so I opted to start some soup... I started with just chicken, carrots and onion and throughout the day I added various spices, cabbage, kale, tomato sauce, roasted garlic, and I'm not sure what else... But I topped it with some parm and it was a great healthy dish that used up a bunch of our CSA veggies!

Day 2: Steel Cut Oatmeal

We LOVE this oatmeal! It's high in protein, has a great texture & tastes great! The only con is that it takes about 45 minutes to cook- but it's worth it!!
Today we added honey, bananas & cinnamon.

Day 1: Whole Wheat Bread

I can bake.... Almost too well at times... But me and my bread machine, well we're fighting! I am DETERMINED to master a whole wheat loaf of bread (with no funky ingredients) in my bread machine. I can make a good loaf without but I want the ease.... I want to make all of our bread from scratch (especially our sandwich bread) and in order to do it and keep it up I need a fast and easy routine.

We dislike the taste or texture of all of the recipes we've tried to date (about a dozen) so I am making my own. Tonight was my first loaf with my own recipe. I think either my yeast needs a little more love or my husband really didn't use his head when he turned on the blender next to the machine to make Orange Julius (just OJ, vanilla, milk & ice)...
I'll post a picture of the "cat bread" below (-; the flavor is spot on; it's soft, fluffy, and just all around amazing!! I'm so onto something here! I just have some fine tuning!
